These nut-free orange flavoured muffins, filled with small pieces of soft pear is heavenly with a morning coffee!

Ingredients – for 6 muffins
- 1/3 cup coconut flour
- 1/4 cup erythritol sweetener
- 6 tsp protein powder
- 1 tsp baking powder
- 1/8 tsp salt
- 3 large eggs
- 2.5 tbsp avocado oil
- 1/4 cup water
- 1/2 tsp vanilla extract
- 1/2 tsp Orange abstract
- 1 small pear cut in small pieces
- sliced almonds
Instructions
- Preheat the oven to 177 C
- Mix the eggs, sweetener, vanilla, and orange abstract
- whisk together the coconut flour, protein powder, baking powder and salt.
- add the dry ingredients to the egg mix and whisk together until smooth
- fold in the pears and divide batter among prepared muffin cups.
- Sprinkle the tops with the sliced almonds and press lightly to adhere.
- Bake about 25 minutes
- Remove and let cool 15 minutes before serving.
