Orange-pear Muffins

These nut-free orange flavoured muffins, filled with small pieces of soft pear is heavenly with a morning coffee!

Ingredients – for 6 muffins

  • 1/3 cup coconut flour
  • 1/4 cup erythritol sweetener
  • 6 tsp protein powder
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 3 large eggs
  • 2.5 tbsp avocado oil
  • 1/4 cup water
  • 1/2 tsp vanilla extract
  • 1/2 tsp Orange abstract 
  • 1 small pear cut in small pieces
  • sliced almonds 

Instructions

  1. Preheat the oven to 177 C 
  2. Mix the eggs, sweetener, vanilla, and orange abstract
  3. whisk together the coconut flour, protein powder, baking powder and salt.
  4. add the dry ingredients to the egg mix and whisk together until smooth
  5. fold in the pears and divide batter among prepared muffin cups.
  6. Sprinkle the tops with the sliced almonds and press lightly to adhere.
  7. Bake about 25 minutes
  8. Remove and let cool 15 minutes before serving.
