Panna Cotta

This is a super quick and delicious treat for busy days, especially during summer when strawberries are ripe and delicious 🙂

Makes 4 servings.

Ingredients

  • 1 cup chopped strawberries
  • 1 1/2 cups heavy whipping cream
  • 2 tsp grassfed gelatin
  • 1/4 cup erythritol, Confectioner
  • ½ tsp vanilla extract

Instructions

  1. Puree the strawberries in a blender until smooth.
  2. Pour the cream into a saucepan.
  3. Sprinkle with the gelatin and whisk well to combine. Set over medium heat and bring to a simmer. 
  4. Remove from heat and whisk in the strawberries, erythritol, and vanilla extract.
  5. Divide the mixture among the ramekins or dessert cups and refrigerate until set, overnight.
