This one is based on an initial recipe I found on Diet Doctor (link) but I swapped the aubergine with zucchini is it makes it lighter, and played a bit with the measures of the ingredients…
This makes 2 big portions.
Ingredients
- 2 small zucchini
- 250 gr minced meat
- one small onion
- fresh green pepper
- 1 tbsp balsamico
- 1/4 tsp salt and 1/4 tsp pepper
- 1/4 tsp oregano
- 1/4 tsp cinnamon
- 1 tbsp cream cheese
- 1/4 cup heavy cream
- 1/4 gruyere cheese
- 1/2 cup mozzarella
- arabiata sauce
Instructions
- peel and slice the zucchini into small rounds, coat with olive oil and put them in the airfryer for 25 min
- start roasting the minced meet and the onion in a non-stick pan
- spice with the balsamico, organo, cinnamon, salt and pepper
- add the green pepper cut in small pieces and mix
- when the minced meat starts to brown, add the arabiata salt and mix till it’s not too liquid anymore
- add the cream cheese and heavy cream and whisk
- add the gruyere
- then add a layer of the minced meat mix in an oven proof pyrex form, top it with the roasted zucchini, then add the rest of the meat mix above it
- sprinkle the top with the mozarella, and add some oregano
- cook in the oven at 220°C for about 20 min
