Mini keto bagels that are chewy and fluffy. This recipe makes about 6 mini bagels, and this is the link for the original recipe.
Ingredients
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/3 tsp xanthan gum
- 3/4 cup pre-shredded mozzarella
- 1 large egg
Optional Topping
- 1 tsp sesame seeds or black seed
Instructions
- Preheat the oven to 177 C
- whisk together the dry ingredients
- melt the cheese until well melted and almost liquid.
- Stir in the flour mixture and the egg and knead.
- Cut the dough in 8 equal pieces.
- Roll each portion. Pinch the ends of the log together.
- add sesame or black seed
- Bake 15 to 20 minutes, until the bagels have risen and are golden brown.
