Bagels

Mini keto bagels that are chewy and fluffy. This recipe makes about 6 mini bagels, and this is the link for the original recipe.

Ingredients

  • 1/4 cup coconut flour 
  • 1 tsp baking powder
  • 1/3 tsp xanthan gum
  • 3/4 cup pre-shredded mozzarella
  • 1 large egg

Optional Topping

  • 1 tsp sesame seeds or black seed

Instructions

  1. Preheat the oven to 177 C
  2. whisk together the dry ingredients
  3. melt the cheese until well melted and almost liquid. 
  4. Stir in the flour mixture and the egg and knead.
  5. Cut the dough in 8 equal pieces.  
  6. Roll each portion. Pinch the ends of the log together. 
  7. add sesame or black seed
  8. Bake 15 to 20 minutes, until the bagels have risen and are golden brown.
