Cashew Chicken

This is a quick and tasty dish for busy days. I usually like to eat it on its own because it’s very delicious and the cashew makes it quite rich so I don’t usually need cauliflower rice as a side.

Ingredients for one portion

one portion 

  • 150 gr chicken breast
  • 1/8 cup raw cashews
  • 1/4 medium Green Bell Pepper
  • 1/4 tsp ground ginger
  • 1/2 tsp rice wine vinegar
  • 1/2 tsp liquid aminos
  • 1/2 tsp chili garlic sauce
  • 1/4 tsp garlic powder
  • 1/2 tsp Sesame Oil
  • 1/2 tsp Sesame Seeds
  • 1/3 tbsp green onions
  • 1/4 medium white onion
  • 1/4 tsp Pepper

INSTRUCTIONS

  • Dice chicken into small pieces
  • cut onion and pepper
  • Add some butter to the pan then add in the chicken and allow them to cook through(about 5 minutes).
  • Once the chicken is fully cooked. Add in the pepper, onions, garlic, chili garlic sauce and seasonings(ginger, salt, pepper). Allow to cook on high for 2-3 minutes.
  • Add liquid aminos, rice wine vinegar, and cashews. Cook on high and allow the liquid to reduce down.
  • Serve, top with sesame seeds and drizzle with sesame oil.
