This is a quick and tasty dish for busy days. I usually like to eat it on its own because it’s very delicious and the cashew makes it quite rich so I don’t usually need cauliflower rice as a side.

Ingredients for one portion

- 150 gr chicken breast
- 1/8 cup raw cashews
- 1/4 medium Green Bell Pepper
- 1/4 tsp ground ginger
- 1/2 tsp rice wine vinegar
- 1/2 tsp liquid aminos
- 1/2 tsp chili garlic sauce
- 1/4 tsp garlic powder
- 1/2 tsp Sesame Oil
- 1/2 tsp Sesame Seeds
- 1/3 tbsp green onions
- 1/4 medium white onion
- 1/4 tsp Pepper
INSTRUCTIONS
- Dice chicken into small pieces
- cut onion and pepper
- Add some butter to the pan then add in the chicken and allow them to cook through(about 5 minutes).
- Once the chicken is fully cooked. Add in the pepper, onions, garlic, chili garlic sauce and seasonings(ginger, salt, pepper). Allow to cook on high for 2-3 minutes.
- Add liquid aminos, rice wine vinegar, and cashews. Cook on high and allow the liquid to reduce down.
- Serve, top with sesame seeds and drizzle with sesame oil.
