Coconut Macaroons

I found this one by accident on this site. It’s quick and easy, and I can take it in my bag as a quick snack on the go when I have a long day out.

INGREDIENTS: 

  • 1 Large Egg
  • 3/4 Cup full fat coconut milk
  • 1 1/4 Cups finely shredded coconut
  • 1/3 Cup granulated erythritol
  • 3 Tbsps coconut flour

INSTRUCTIONS

  • Add all of the ingredients to a large bowl.
  • Mix until a thick batter forms.
  • Once the consistency matches mine in the video, take out a cookie scoop and scoop out 15 equal sized cookies onto a baking sheet lined with parchment paper.
  • Bake at (180 C) for around 26 minutes (or until the tops turn golden brown).
