Crème Brûlée

This is a very delicious treat that I like to indulge in every now and then. I never thought I can make it, the recipe sounded pretty sophisticated. But once I followed the steps it turned out amazing!

Servings: 4 servings

Ingredients

  • 1 + 1/3 cup Heavy cream
  • 4 Egg yolk
  • two thirds of 1/4 cup Erythritol 
  • 1/2 tsp Vanilla extract 
  • 1 tbsp Brandy (or whiskey) 

Instructions

  1. Preheat oven to 177 degrees C
  2. Beat the yolks and 2/3 tablespoon of the granulated sweetener  and the vanilla extract
  3. Put the heavy cream and add the remaining erythritol over medium heat, stirring occasionally until bubbles begin to simmer around the edge of the pot
  4. Turn off the heat and being pouring the egg yolk into the hot cream mixture – very slowly in a thin stream, while quickly whisking all the while. Whisk in the brandy
  5. Divide between 4 ramekins.
  6. Place the ramekins into the pan and fill the pan with hot water half way up the sides of the ramekins.
  7. Place the pan into the oven and bake for 30 minutes.
  8. Let it cool in the water bath for an hour before removing to a rack to cool completely
  9. Cover with plastic wrap and refrigerate at least 4 hours.
