This is a very delicious treat that I like to indulge in every now and then. I never thought I can make it, the recipe sounded pretty sophisticated. But once I followed the steps it turned out amazing!

Servings: 4 servings
Ingredients
- 1 + 1/3 cup Heavy cream
- 4 Egg yolk
- two thirds of 1/4 cup Erythritol
- 1/2 tsp Vanilla extract
- 1 tbsp Brandy (or whiskey)
Instructions
- Preheat oven to 177 degrees C
- Beat the yolks and 2/3 tablespoon of the granulated sweetener and the vanilla extract
- Put the heavy cream and add the remaining erythritol over medium heat, stirring occasionally until bubbles begin to simmer around the edge of the pot
- Turn off the heat and being pouring the egg yolk into the hot cream mixture – very slowly in a thin stream, while quickly whisking all the while. Whisk in the brandy
- Divide between 4 ramekins.
- Place the ramekins into the pan and fill the pan with hot water half way up the sides of the ramekins.
- Place the pan into the oven and bake for 30 minutes.
- Let it cool in the water bath for an hour before removing to a rack to cool completely
- Cover with plastic wrap and refrigerate at least 4 hours.

it’s a sugar alcohol, a sort of sweetener that has very little effect on insulin levels https://en.wikipedia.org/wiki/Erythritol
