Meatballs alla Parmigiana

This is a favourite Italian dish that goes really well with cauliflower rice. A very yummy dinner 🙂

Servings 3 servings (10 meatballs – each serving 3-4 meatballs)

Ingredients

  • 250-300 gr ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • a fresh onion
  • 1/4 tsp dried oregano leaves
  • 2 tbsp chopped fresh parsley plus more for garnish, if desired
  • 2 tbsp grated parmesan cheese
  • 1 tbsp almond flour
  • 1/2 large egg beaten
  • 1/2 cup arabiata sauce and heavy cream mix
  • 1/2 cup shredded whole milk mozzarella

Instructions

  1. Preheat the oven to 177 C
  2. combine the ground beef, parsley, salt, pepper, garlic powder, onion, oregano, Mix thoroughly, then leave in the fridge for at least 4 hours
  3. add Parmesan, almond flour and egg
  4. Form the meat mixture into 10 meatballs. Bake 20 minutes.
  5. Place the meatballs in a casserole dish large enough to fit them all. Spoon the arabiata sauce evenly over, then sprinkle the cheese overtop. 
  6. Bake another 25 minutes. 
  7. Garnish with chopped fresh parsley
