Croissants

I really like croissants, especially in the morning with a piece of feta cheese, yum! It took me a couple of tries until I really perfected this one, but it now turns out delicious every single time. I based it on the great recipe in this link, and made some slight changes (added vanilla powder, skipped the marzipan and a couple more changes)

Ingredients

  • 1/4 cup coconut flour
  • 1/2 tsp xanthan gum
  • 1 tsp baking powder
  • 1 tsp brown erythritol
  • pinch of salt
  • 1/4 tsp vanilla powder 
  • 150 gr mozzarella
  • 1 medium egg
  • 1 tbsp butter, melted

Instructions

  1. Preheat the oven to 200C (you will take this down to 177C as soon as you put the croissants in the oven)
  2. whisk the coconut flour, sweetener, baking powder, and xanthan gum, then add the egg and mix well
  3. Melt the mozzarella, then add the mixture and knead.
  4. roll the dough into a circle.then cut it into 8 even wedges. 
  5. Roll them into croissant shape.  Brush with melted butter 
  6. Place in the oven and immediately turn it down to 177 C.
  7. Bake 20 minutes, and let it rest for 5 min before enjoying
