I really like croissants, especially in the morning with a piece of feta cheese, yum! It took me a couple of tries until I really perfected this one, but it now turns out delicious every single time. I based it on the great recipe in this link, and made some slight changes (added vanilla powder, skipped the marzipan and a couple more changes)
Ingredients
- 1/4 cup coconut flour
- 1/2 tsp xanthan gum
- 1 tsp baking powder
- 1 tsp brown erythritol
- pinch of salt
- 1/4 tsp vanilla powder
- 150 gr mozzarella
- 1 medium egg
- 1 tbsp butter, melted
Instructions
- Preheat the oven to 200C (you will take this down to 177C as soon as you put the croissants in the oven)
- whisk the coconut flour, sweetener, baking powder, and xanthan gum, then add the egg and mix well
- Melt the mozzarella, then add the mixture and knead.
- roll the dough into a circle.then cut it into 8 even wedges.
- Roll them into croissant shape. Brush with melted butter
- Place in the oven and immediately turn it down to 177 C.
- Bake 20 minutes, and let it rest for 5 min before enjoying
