These protein muffins are quick, and easy. They taste really nice and I try a different sort of fruit filling every time. It’s versatile and delicious, you can adjust it to your own taste very easily.

Ingredients
- 1/3 cup coconut flour
- 1/4 cup sweetner
- 6 tsp protein powder
- 1 tsp baking powder
- 1/8 tsp salt
- 3 eggs
- 2.5 tbsp avocado oil
- 1/8 cup water
- 1/2 tsp vanilla extract
- 1/2 tsp Orange abstract
- 18 red berries (3 for each muffin)
- Optional: Top with some sliced almonds
Instructions
- Preheat the oven to 177 C
- whisk together the coconut flour, sweetener, protein powder, baking powder and salt.
- Stir in the eggs, avocado oil, the water, and the vanilla extract.
- add the berries and press lightly to adhere.
- Bake about 25 minutes
- Remove and let cool 15 minutes before serving.
