I’ve been looking for a low carb pasta alternative for a while but couldn’t find something that I could really like. I didn’t like Shirataki noodles, and zoodles don’t exactly convince me 🙂
Only lately, I’ve tried palm of hearts as a pasta alternative, and I must say they are the closest I could find to the real thing so far. You can find the original recipe here.
- 1/2 can Palmini Heart of Palm
- 2 medium mushrooms
- 1/2 cup heavy whipping cream
- 1 tbsp parmesan cheese
- 1 tbsp butter
- 1 minced garlic clove
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp oregano
- fresh parsley
- Soak palm of hearts in milk for 30 min to remove any taste
- Roast the mushrooms in a small pan
- In another pan, melt butter in a saucepan over medium heat and add heavy cream, garlic, and spice to the saucepan; stirring constantly
- when mushrooms are roasted, remove them, and add the palm of hearts to roast them – cook them enough to evaporate any extra liquid.
- add the parmesan to the sauce and let simmer for a min
- add the mushrooms and palm hearts directly to the Alfredo sauce
- add fresh parsley and mix
