Alfredo Pasta

I’ve been looking for a low carb pasta alternative for a while but couldn’t find something that I could really like. I didn’t like Shirataki noodles, and zoodles don’t exactly convince me 🙂

Only lately, I’ve tried palm of hearts as a pasta alternative, and I must say they are the closest I could find to the real thing so far. You can find the original recipe here.

  • 1/2 can Palmini Heart of Palm
  • 2 medium mushrooms
  • 1/2 cup heavy whipping cream
  • 1 tbsp parmesan cheese 
  • 1 tbsp butter
  • 1 minced garlic clove
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp oregano
  • fresh parsley
  1. Soak palm of hearts in milk for 30 min to remove any taste
  2. Roast the mushrooms in a small pan
  3. In another pan, melt butter in a saucepan over medium heat and add heavy cream, garlic, and spice to the saucepan; stirring constantly
  4. when mushrooms are roasted, remove them, and add the palm of hearts to roast them – cook them enough to evaporate any extra liquid.
  5. add the parmesan to the sauce and let simmer for a min
  6. add the mushrooms and palm hearts directly to the Alfredo sauce
  7. add fresh parsley and mix
