Mince filled aubergine

I fell in love with this simple yet super satisfying dish when my good friend and neighbour cooked it for me 🙂 I really enjoyed every bite (thanks again my dear friend who does not like to be named 😉 )

She agreed to have me share the recipe with the world! It’s a quick, delicious, and light dinner or brunch… enjoy

This recipes makes 2 aubergines (4 halves, for 2-4 people)

Ingredients

  • 200 gr minced meat
  • 1 small onion
  • 1 tsp oregano
  • half a fresh paprika (pepper)
  • 1 tsp cinnamon
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/4 tsp chilli 
  • Fresh parsley
  • 2 medium aubergines
  • 4 tsp parmesan powder
  • 4 tsp arabiata sauce
  • 4 tsp heavy cream

Instructions

  • Preheat oven 200C, and half the aubergines, carve their meat to form small “boats” then brush them with olive oil
  • roast the aubergine for 35 min, then lower the oven temperature to 180C
  • mince the onion then add the minced meat and fresh paprika on medium heat on the stove and start mixing
  • add all the spice except the fresh parsley and keep moving the mix until cooked and all liquids from the meat are dry 
  • add the fresh parsley and cook 2-3 more minutes
  • once the meat is full cooked, add the arabiata sauce, parmesan, and heavy cream and mix well
  • fill the 4 aubergine halves with the minced meat mix and roast for 20 min (make sure the oven temperature is down to 180C before putting them, otherwise they might burn a bit)
