This recipes makes 2 aubergines (4 halves, for 2-4 people)
Ingredients
- 200 gr minced meat
- 1 small onion
- 1 tsp oregano
- half a fresh paprika (pepper)
- 1 tsp cinnamon
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 1/4 tsp salt
- 1/4 tsp chilli
- Fresh parsley
- 2 medium aubergines
- 4 tsp parmesan powder
- 4 tsp arabiata sauce
- 4 tsp heavy cream
Instructions
- Preheat oven 200C, and half the aubergines, carve their meat to form small “boats” then brush them with olive oil
- roast the aubergine for 35 min, then lower the oven temperature to 180C
- mince the onion then add the minced meat and fresh paprika on medium heat on the stove and start mixing
- add all the spice except the fresh parsley and keep moving the mix until cooked and all liquids from the meat are dry
- add the fresh parsley and cook 2-3 more minutes
- once the meat is full cooked, add the arabiata sauce, parmesan, and heavy cream and mix well
- fill the 4 aubergine halves with the minced meat mix and roast for 20 min (make sure the oven temperature is down to 180C before putting them, otherwise they might burn a bit)
