This is a nice, nut free recipe for the days when I am craving a small sandwich. I decorate it with sesame, black seed, or just some oregano. It freezes well, so I can just grab one out of the freezer when I am craving it.

NGREDIENTS
- 1/2 cup coconut flour
- 2 tablespoon baking powder
- 250 grams mozzarella cheese shredded (about 2-1/2 cups)
- 55 grams cream cheese
- 3 large eggs beaten
- 2 tablespoons butter melted (add a bit more if needed)
INSTRUCTIONS
- Preheat oven to 205°C
- Mix coconut flour and baking powder
- Melt mozzarella cheese and cream cheese in a pan on medium heat
- Mix in beaten eggs, butter, and coconut flour mixture until a dough is formed. Dough should be a bit wet and sticky. If dry, add more butter.
- Divide in a silicone mould into 8 pieces. Dough is easier to work with if hands are wet.
- Bake for 15 minutes or until lightly browned
