These are great for an on the go snack, I can put them in my bag, and I even travel with some of these as a quick snack when I am out all day.
They freeze well and they don’t melt.
I am usually not a big fan of protein powders, but they are sometimes a good boost when we do resistance training and our other meals don’t contain enough protein.

Ingredients
- 65 gr Butter – softened
- 1/6 cup Powdered erythritol
- 1/2 tsp Vanilla extract
- 2/3 cup almond flour
- 1/4 cup (30 gr)Protein powder
- 1/8 tsp Sea salt
- optional: 1/8 cup Sugar-free dark chocolate chips or sliced almonds
Instructions
- Mix the butter and sweetener in a large bowl. Beat in the vanilla and molasses
- In a smaller bowl, stir together the almond flour, collagen powder, and sea salt. Add the dry ingredients to the large bowl. Beat with the hand mixer until a crumbly dough forms.
- Fold in the chocolate chips. Refrigerate for 20 minutes.
- Use a small cookie scoop to make small balls, about a tablespoon each, pinching as needed with your fingers. (You will not be able to roll them between your palms. Just pinch after releasing from the cookie scoop to make a uniform ball.) Place on the cookie sheet. Refrigerate for at least an hour, until firm.
