Protein Bites

These are great for an on the go snack, I can put them in my bag, and I even travel with some of these as a quick snack when I am out all day.

They freeze well and they don’t melt.

I am usually not a big fan of protein powders, but they are sometimes a good boost when we do resistance training and our other meals don’t contain enough protein.

 Servings: 12 bites 

Ingredients

  • 65 gr Butter – softened
  • 1/6 cup Powdered erythritol 
  • 1/2 tsp Vanilla extract
  • 2/3 cup almond flour 
  • 1/4 cup (30 gr)Protein powder
  • 1/8 tsp Sea salt
  • optional: 1/8 cup Sugar-free dark chocolate chips or sliced almonds

Instructions

  1. Mix the butter and sweetener in a large bowl. Beat in the vanilla and molasses
  2. In a smaller bowl, stir together the almond flour, collagen powder, and sea salt. Add the dry ingredients to the large bowl. Beat with the hand mixer until a crumbly dough forms. 
  3. Fold in the chocolate chips. Refrigerate for 20 minutes.
  4. Use a small cookie scoop to make small balls, about a tablespoon each, pinching as needed with your fingers. (You will not be able to roll them between your palms. Just pinch after releasing from the cookie scoop to make a uniform ball.) Place on the cookie sheet. Refrigerate for at least an hour, until firm.
